Ingredients
- 3 cups light coconut milk
- 3/4 cup fat free milk
- 1/2 cup long grain white rice
- 1/4 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Directions
- Combine the coconut milk, fat free milk, rice and sugar in a medium saucepan. Bring to a simmer, cover and cook over low heat until the rice is tender and the mixture is creamy, about 60 minutes.
- Remove from the heat; stir in the vanilla and the cinnamon.
- Sprinkle a little cinnamon on top for color.
