Strawberry Italian Ice

Ingredients

  • 3/4 cup thawed unsweetened apple juice concentrate
  • 2 tablespoons lemon juice
  • 2 pints fresh strawberries, hulled and halved
  • Fresh mint or lemon leaves (optional)

Directions

  1. In a blender, combine the apple juice concentrate, lemon juice and strawberries; cover and process until well blended. Pour into an ungreased 8'' square dish. Cover and freeze 1 1/2 - 2 hours or until partially set.
  2. Remove mixture from freezer and place in a large bowl. With a hand mixer, beat on medium speed for about 2 minutes. Return to the 8'' square dish and freeze an additional 2-3 hours or until firm.
  3. Let stand at room temperature about 10 minutes before serving. Spoon into individual dessert glasses. Garnish with mint or lemon leaves, if desired.
