Chocolate Creme Parfaits

Ingredients

  • 1 egg
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup boiling milk
  • 1 tablespoon dark rum
  • 1/2 cup whipping cream

Directions

  1. Whip 1 egg in blender for 5 seconds. Add 1/2 cup chocolate chips and 1/4 cup boiled milk until smooth. Add 1 tablespoon of dark rum and blend for 5 seconds. Transfer to a bowl and freeze, stirring often, until cool, about 15 minutes.
  2. Whip 1/2 cup heavy whipping cream until stiff and fold into the chocolate mixture. Pour into parfait glasses. Refrigerate until time to serve. Garnish with shaved chocolate or mint leaves, if desired.
