Chocolate Almond Truffles

Ingredients
- 1/2 cup undiluted evaporated milk
- 1/4 cup sugar
- 1 package (11oz.) milk chocolate chips
- 1/2 - 1 teaspoon almond extract
- 1 cup finely chopped almonds, toasted
Directions
- Combine milk and sugar in a small heavy saucepan; cook over medium heat until mix comes to a full rolling boil. Boil 3 minutes, stirring constantly.
- Remove from heat; stir in chocolate chips and almond extract. Stir until chocolate is melted and mixture is smooth. Chill 45 minutes. Shape into 1 inch balls and roll in chopped almonds. Chill until ready to serve.
