Caramel Apple Empanadas

Ingredients

  • 1/2 cup white sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon flour
  • 8 cups peeled and sliced tart apples*
  • 1/2 cup water
  • 1 jar (16oz.) caramel ice cream topping
  • 2 tablespoons butter
  • 20 flour tortillas (8'')
  • oil for frying

Directions

  1. Stir together sugar, cinnamon and flour; set aside.
  2. Bring apples and 1/2 cup water to a boil; cover reduce heat to a simmer and cook 10 minutes or until apples are tender. Remove from heat and gently stir in sugar/flour mixture, caramel topping and butter. Do not over stir.
  3. Cool to lukewarm.
  4. Spoon 3-4 tablespoons of apple mixture onto each tortilla. Fold ends up and sides in and roll like a burrito. Secure with toothpicks.
  5. Using a deep heavy pan, pour oil to a 2 inch depth and heat to 360 degrees F. Using tongs, place 2-3 Empanadas in hot oil and fry until golden brown, about 1-2 minutes. Drain on paper towels and remove toothpicks.
  6. OPTIONAL: Sprinkle with cinnamon/sugar and serve with ice cream.

Notes

*Tart cooking apples include Granny Smith or Golden Delicious
