Stiffened Whipped Cream

This prevents whipped cream from ''weeping''

Ingredients

  • 1 cup of whipping cream
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons cold water
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla (or any other extract you prefer)

Directions

  1. Soften one teaspoon unflavored gelatin in 2 tablespoons of cold water for 5 minutes. Heat the gelatin just until melted then blend with one cup whipping cream, whisking as you add the gelatin so it blends evenly and the gelatin does not harden in lumps as you pour it into the cold cream.
  2. Chill the gelatin and cream mixture at least one hour. It will become thick.
  3. After chilling, add 2 tablespoons powdered sugar and one teaspoon extract.
  4. Whip at high speed with an electric mixer until the cream is very thick and holds its shape.

Notes

Vanilla is the standard extract but you can add any flavoring in place of it. The standard trick is to freeze the beaters before whipping the cream.
