Turtle Pie (Caramel Chocolate Pie)

Ingredients
- Pre-baked 9'' pie crust
- 28 caramels
- 1 cup heavy whipping cream, divided into 1/4 cup & 3/4 cup
- 8 tablespoons butter (2 tablespoons and 6 tablespoons)
- 3/4 cup (6 oz.) semi sweet chocolate chips
- 1/4 cup chopped nuts (walnuts, pecans, macadamias)
Directions
- Melt together the caramels, 1/4 cup of cream and 2 tablespoons butter over low heat until melted. Pour into pre-baked pie crust.
- Boil together 3/4 cup cream and the remaining 6 tablespoons of butter. Remove from heat and stir in chocolate chips. Blend until smooth. Pour over caramel layer.
- Cool until chocolate is thick enough that the nuts wont sink into the chocolate. Chill to set. Store in refrigerator.
