Turtle Pie (Caramel Chocolate Pie)

Ingredients

  • Pre-baked 9'' pie crust
  • 28 caramels
  • 1 cup heavy whipping cream, divided into 1/4 cup & 3/4 cup
  • 8 tablespoons butter (2 tablespoons and 6 tablespoons)
  • 3/4 cup (6 oz.) semi sweet chocolate chips
  • 1/4 cup chopped nuts (walnuts, pecans, macadamias)

Directions

  1. Melt together the caramels, 1/4 cup of cream and 2 tablespoons butter over low heat until melted. Pour into pre-baked pie crust.
  2. Boil together 3/4 cup cream and the remaining 6 tablespoons of butter. Remove from heat and stir in chocolate chips. Blend until smooth. Pour over caramel layer.
  3. Cool until chocolate is thick enough that the nuts wont sink into the chocolate. Chill to set. Store in refrigerator.
