Marbled Cheesecake Bars

Ingredients

  • 2 cups vanilla wafer crumbs (about 60 wafers)
  • 1/2 cup Cocoa powder
  • 1/2 cup confectioners sugar
  • 1/2 cup butter, melted
  • 2 (8oz) packages cream cheese, softened
  • 1 (14oz.) can sweetened condensed milk (not evaporated)
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 2 squares (2oz.) unsweetened baking chocolate, melted

Directions

  1. Preheat oven to 300 degrees F. Combine wafer crumbs, cocoa, sugar and butter. Press firmly on bottom of a 13X9 baking pan.
  2. In a large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add eggs and vanilla; mix well. Pour half the batter evenly over prepared crust. Stir melted chocolate into remaining batter; spoon over vanilla batter.
  3. With a table knife or metal spatula, gently swirl through batter to marble.
  4. Bake 45 to 50 minutes or until set. Cool and chill. Cut into bars. Store covered in refrigerator.
