Chocolate Chunky Cheesecake

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup butter, melted
  • 3 packages (8oz.each) cream cheese, softened
  • 3/4 cup sugar
  • 3 eggs
  • 1/2 cup sour cream
  • 12 squares semi sweet or sweet baking chocolate, divided
  • 1/2 cup whipping cream

Directions

  1. Preheat oven to 350 degrees F (or 325 degrees F if using a dark nonstick spring form pan).
  2. Beat cream cheese and sugar in a large bowl with electric mixer on medium speed until well blended. Add eggs, one at a time, mixing just until blended after each addition. Stir in sour cream and 8 squares of chopped chocolate pieces. Pour over crust.
  3. Bake 45-50 minutes or until center is almost set. Run knife around side of pan to loosen cake but don't release it. Cool completely.
  4. Bring whipping cream to a simmer on low heat. Remove from heat and add 4 squares of the chopped chocolate. Stir until completely melted. Cool slightly.
  5. Pour over cheesecake. Refrigerate at least 3 hours or overnight. Run knife around the edges again and release cake from pan.
