Coconut Macadamia Nut Cookies

Ingredients

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 cup flaked coconut
  • 1 jar ( 3 1/2 oz.) macadamias, coarsely chopped

Directions

  1. Preheat oven to 375 degrees F.
  2. Mix butter, sugars and egg until well blended. Stir in flour and baking soda (dough will be stiff). Stir in coconut and nuts.
  3. Drop dough by heaping teaspoonfuls about 2'' apartment onto ungreased cookie sheet. Bake until light and brown, 8-10 minutes. Centers will be soft.
  4. Cool slightly; remove from cookie sheet to wire rack.
