White Chocolate Chunk Madadamia Cookies

Ingredients

  • 3 cups flour, sifted
  • 3/4 teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 3/4 cup packed light brown sugar, minus 1 tablespoon
  • 3/4 cup sugar, minus 1 tablespoon
  • 1 tablespoon vanilla
  • 2 large eggs plus 1 egg yolk
  • 24 oz. white chocolate, chopped into chunks
  • 2 cups chopped macadamia nuts

Directions

  1. Preheat oven to 325 degrees F.
  2. Line cookie sheets with parchment paper
  3. Combine flour and baking soda; set aside. Cream butter and sugars until light and fluffy; add vanilla. Blend in eggs and yolk. Fold in flour, blending well. Mix in chocolate and nuts.
  4. Roll into balls and place on cookie sheet 2'' apart. Flatten slightly with the palm of your hand or a spatula.
  5. bake 12-15 minutes or until set.
