Almond Butter Spritz Cookies

Servings: 12 || Yields: 3 dozen

Ingredients

  • 1/4 lb. almond paste
  • 1 1/4 cups confectioners sugar
  • 2 large eggs plus 1 extra yolk, divided and lightly beaten.
  • 2 sticks unsalted butter softened
  • 3 cups sifted cake flour
  • Parchment paper

Directions

  1. Set oven racks on top and lower thirds of the oven and preheat to 325 degrees F. Line cookie sheets with parchment paper or foil.
  2. In bowl, soften the almond paste with the confectioners sugar and 1 egg. Gradually beat in butter, then gradually add remaining eggs. Cream all ingredients until light, about 2-3 minutes. Add the cake flour all at once and mix until well blended but not over mixed.
  3. Fill a pastry bag fitted with a 1/2'' star tip. Pipe half inch shapes onto prepared pans.
  4. Bake about 15 minutes or until golden and firm. Cool cookies on pan

Notes

Use a variety of pastry tips. Decorate with pieces of candied fruit, chocolate chips or nuts before baking.
After baking, dip cookie edges in melted chocolate and roll edges in Pistashio nuts or finely chopped pecans.
