Cocnut Macaroons

Servings: 24 || Yields: 3-4 dozen cookies
Ingredients
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon salt
- 3/4 cup sugar
- 1/4 teaspoon almond extract
- 3 drops red or green food color (optional)
- 2 cups flaked coconut
- 12 candies cherries, each cut into quarters
Directions
- Preheat oven to 300 degrees F.
- Beat egg whites, cream of tartar and salt in a medium size bowl until foamy. Beat in sugar, 1 tablespoon at a time; continue beating until stiff and glossy. Do not under beat. Pour into a 2 1/2 qt. bowl. Fold in almond extract, food color (if desired) and coconut.
- Drop mixture by teaspoonfuls about 1'' apart onto easy release aluminum foil covered cookie sheet.
- Place a cherry piece on each cookie. Bake just until the edges are light brown, 20-25 minutes. Cool 10 minutes and remove from foil.
