White Chocolate Meltaways

Ingredients

  • 1 cup unsalted butter, at room temperature
  • 1 egg
  • 3/4 cup confectioners sugar
  • 2 1/4 cups flour
  • pinch salt
  • 2 teaspoons vanilla
  • 12 oz. white baking chocolate, chopped
  • 2/3 cup assorted nonpareils

Directions

  1. Preheat oven to 375 degrees F.
  2. Beat butter in a medium size bowl until creamy. Beat in egg. Add sugar, flour, salt and vanilla. Beat on low speed until well blended.
  3. Put dough into cookie press fitted with 1'' sawtooth ribbon disk. Press into long strips on ungreased baking sheets. With a floured knife, score strips every 1 inch.
  4. Bake cookies for 6 minutes, until just brown around edges. Cut cookies along score line and cool on a rack.
  5. Melt the white chocolate in a double boiler, or microwave on high 2 minutes, stirring every 30 seconds until smooth. Spread 1/2 teaspoon of the melted chocolate on the underside of cookie; top with another cookie, flat sides together. Repeat with remaining cookies then refrigerate 5 minutes to set.
  6. Place nonpareils in dish. Dip 1/2 inch end of cookie in remaining chocolate, then into the nonpareils. Place on waxed paper. Refrigerate to set.
