Holiday Spice Bread Mini Loaves

Ingredients

  • 1 1/2 cup plus 2 tablespoons flour
  • 1 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/2 teaspoon cinnamon
  • 1 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 2 eggs
  • 1/2 cup water
  • 1 can (15oz.) solid pack pumpkin
  • 1/2 cup salad oil
  • OPTIONAL: 1/4 cup raisins and 1/2 cup chopped nuts

Directions

  1. Preheat oven to 350 degrees F.
  2. Mix dry ingredients and set aside. In a large bowl, mix eggs, water, oil and pumpkin. Mix dry ingredients into the mixture and mix well. Add nuts and raisins, if desired.
  3. Fill each mini loaf with scant 1/2 cup of mixture and bake 20-30 minutes or until toothpick inserted in center comes out clean. Let cool in pan 10 minutes. Release loaves and place on racks until cool.

Notes

If using a regular loaf pan, bake 50-60 minutes or until toothpick inserted in the middle comes out clean.
