Red Enchilada Sauce

Servings: 8 || Yields: 4 cups
Tasty tomato based spicy Mexican sauce great for enchiladas and chilaquiles

Ingredients

  • 1 can diced tomatoes
  • 1/2 medium white onion
  • 2 cloves garlic
  • 2-3 Jalepenos - sliced
  • 1 cup chicken broth
  • 1/4 cup Cholula hot sauce
  • 1/2 tsp salt
  • 1/2 tsp chili powder (optional)
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Directions

  1. Put the chicken broth and half an onion in a blender. Pulse to chop the onion.
  2. Add the tomatoes, garlic, jalepenos, hot sauce, salt, chili powder and pepper to the blender. Pulse or low speed blend until mostly smooth.
  3. Heat the olive oil in a medium pot over medium/high heat.
  4. Add the sauce to the heated pot and bring to a boil. Reduce heat to medium and simmer for 15 minutes, stirring every few minutes.
  5. Extra sauce can be frozen.
