Italian Flag Tomatoes

Think of them as bruschetta without the bread. Delicious baked tomatoes with cheese and oregano.

Ingredients

  • 2 medium or 3 Roma tomatoes
  • 1/2 cup fresh grated Parmesan cheese
  • Dried or fresh oregano
  • Salt and pepper to taste
  • Olive oil

Directions

  1. Slice tomatoes 1/4'' thick and place on cookie sheet
  2. Sprinkle or grate Parmesan directly onto tomatoes
  3. Place fresh oregano or sprinkle liberally
  4. Add salt and pepper to taste
  5. Drizzle or spray with olive oil
  6. Bake at 450 deg F for 7 minutes or mil cheese is bubbly

Notes

Substitute oregano for basil if desired
