Chilaquiles

Super easy Mexican breakfast of eggs, cheese, corn tortillas, and a spicy red sauce.

Ingredients

  • 8 corn tortillas
  • 4 eggs
  • 1 1/2 cups shredded cheese
  • 1 1/2 cups red enchilada sauce (or any other sauce or salsa or chili you like)

Directions

  1. Use a pizza cutter to slice tortillas into strips or squares about 1''.
  2. Deep fry for 1-2 minutes until crispy.
  3. Drain on paper towels.
  4. Divide fried tortillas onto 2 plates
  5. Top each portion with 3/4 cup shredded Mexican cheese and 3/4 cup sauce.
  6. Prepare 4 eggs over easy or fried and place 2 on top of each portion.

Notes

Try with this red enchilada sauce or a green enchilada sauce or green chili.
Replace eggs with shredded chicken for a non breakfast version.
