Gluten Free Banana Nut Muffins

Servings: 24 || Yields: 24 Muffins
delicious moist muffins for high altitude baking. Just like our bread recipe in muffin form.

Ingredients

  • 1/3 cup Shortening
  • 3/4 cup Granulated White Sugar
  • 2 Eggs
  • 1 3/4 cups Bob's Red Mill All Purpose Gluten Free Flour
  • 1 cup Crushed Pecans
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/4 + 1/8 tsp Xanthan Gum
  • 3 small/medium Mashed Over Ripe Bananas

Directions

  1. You will need 1 large mixing bowl, 2 medium mixing bowls and a muffin pan with cup liners
  2. Preheat oven to 350 deg. F
  3. In a medium bowl, sift together the flour, xanthan gum, baking powder, salt and baking soda
  4. In another medium bowl mash or beat the bananas
  5. In the large bowl, cream together the shortening and sugar.
  6. Add the 2 eggs and beat well.
  7. Slowly add in the flour mixture until mixed. (Dough will become sticky and will thin out once bananas are added)
  8. Add the bananas and mix well.
  9. Add the nuts and stir/beat until just mixed.
  10. Scoop 2 Tablesppons batter into each muffin cup and gently shake on counter to level.
  11. Bake for 25 minutes until toothpick inserted in center comes out clean.
  12. Allow to cool 20 minutes.
  13. Keep covered to preserve moistness.
