Old Bay Baked Clams

Minced clam stuffing can be baked in clam shells or served as as a topping for crackers, toast, or stuffed into celery sticks. Makes a great appetizer or side dish.

Ingredients

  • 4-6 clam shells
  • 1 6.5 oz can of minced clams (do not drain)
  • 1 stick butter
  • 2-3 Tbsp minced onion
  • 2 cloves minced garlic
  • 2 tsp lemon juice
  • 1 tsp parsley
  • 1 tsp Old Bay seasoning
  • 1/3-1/2 cup Italian bread crumbs
  • 1/3 cup grated Parmesan
  • Paprika

Directions

  1. Preheat oven to 350 deg F
  2. Sauté onion in butter about 4 minutes. Add garlic, lemon juice, parsley, Old Bay seasoning and the clams with liquid from the can. Cook 2-3 minutes.
  3. Stir in bread crumbs and Parmesan. Mixture should be wet but hold its shape when scooped. Add more bread crumbs or water to adjust consistency.
  4. Scoop mixture into clam shells or small baking cups and sprinkle tops with paprika.
  5. Bake at 350 deg F for 30 minutes until bubbling and browned.
