Parmesan Potatoes

Ingredients

  • 6 cups potatoes (about 6 medium potatoes), sliced about 1/8'' thick
  • 3 Tablespoons butter, melted and divided
  • 1/2 cup grated Parmesan cheese, divided
  • Chopped chives (optional)

Directions

  1. Preheat oven to 425º. Rinse potatoes, slice and pat dry on paper towels.
  2. Brush 1 tablespoon of butter onto the bottom and sides of a 9'' pie plate. Toss potatoes with remaining 2 tablespoons butter and 1/4 cup Parmesan cheese.
  3. Bake 1 hour or until potatoes are tender. Loosen from side and bottom of pie plate.
  4. Invert onto a serving plate and sprinkle with chives, if desired. Cut into 8 wedges to serve.
