Pork Chops with Sweet Orange BBQ Sauce

Ingredients

  • 1 teaspoon grated orange rind
  • 1/3 cup fresh orange juice
  • 3 Tablespoons ketchup
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon bottled chopped ginger
  • Cooking spray
  • 4 (4oz. each) boneless center-cut loin chops
  • 1/4 teaspoon black pepper

Directions

  1. Combine first 6 ingredients in a small bowl and set aside.
  2. Place a large non stick skillet coated with cooking spray over medium heat. Sprinkle both sides of pork with black pepper and add to pan. Cook 4 minutes per side.
  3. Remove pork from pan and keep warm.
  4. Add orange mixture to pan, scraping to loosen browned bits. Bring to a boil, reduce heat to medium and cook 2 minutes or until mixture is reduced to about 1/4 cup. Serve over pork.
