Italian Pork Tenderloin

Ingredients

  • 1/2 lb. pork tenderloin, trimmed
  • Non stick cooking spray
  • 1/3 cup chopped onion (fresh or frozen)
  • 1/4 teaspoon dried Italian seasoning
  • 1/8 teaspoon salt
  • 1/8 teaspoon fresh black pepper
  • 3/4 Cup Marinara sauce
  • 1/4 Cup (1oz.) shredded part-skim mozzarella cheese

Directions

  1. Cut pork crosswise into 6 pieces. Place each piece between 2 sheets of plastic wrap; flatten each piece to 1/2'' thickness using a meat mallet.
  2. Heat a medium sized nonstick skillet coated with cooking spray over medium to medium-high heat. Add pork and onion and cook 2 minutes on each side or until pork is lightly browned on both sides.
  3. Combine Italian seasoning, salt and pepper, sprinkle over pork and onion. Pour sauce over pork. Cover, reduce heat and simmer 3 minutes or until pork is done.
  4. Sprinkle with cheese; cover and cook 1 minute or until cheese melts.
