Lemon Turkey Cutlets

Ingredients

  • 3 tablespoons all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 (2oz. each) turkey breast cutlets, pounded thinly
  • 2 teaspoons olive oil, divided
  • 2 tablespoons fresh lemon juice
  • Lemon slices (optional)

Directions

  1. Combine flour, salt and pepper in a shallow dish.
  2. Rinse turkey cutlets and pat dry then dredge in flour mixture, shaking off excess flour. Set aside.
  3. Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Add 3 cutlets; cook 3 minutes or until lightly browned. Remove cutlets to a warm serving platter and repeat procedure with remaining oil and turkey.
  4. Reduce heat to medium low, add lemon juice to pan and stir.
  5. Sprinkle lemon sauce over cutlets and garnish with lemon slices, if desired.
