Beef Tenderloin with Mustard-Wine Sauce

Ingredients

  • 1/4 cup low sodium beef broth
  • 1/4 cup dry red wine
  • 1 1/2 teaspoons spicy brown mustard
  • 3/4 teaspoon all purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Non stick cooking spray
  • 2 (4oz.) beef tenderloin steaks,( about 1'' thick) trimmed

Directions

  1. Combine first 6 ingredients in a small bowl. Blend well and set aside.
  2. Heat a 10'' nonstick skillet coated with cooking spray over medium-high heat. Add steaks; cook 4 minutes per side or until desired degree of doneness. Remove to serving plates.
  3. Add broth mixture to pan and bring to a boil, scraping pan to loosen browned bits. Cook until reduced to about 1/4 cup (about 30 seconds.)
  4. Spoon sauce over steaks and serve.
