Foil Packet Chicken and Mushroom Dinner

Ingredients

  • 1 pkg. (6oz.) Stove Top Stuffing Mix for chicken
  • 1 3/4 cups water, divided
  • 6 small boneless, skinless chicken breasts (about 1/2'' thick)
  • 4 slices thin sliced Smoked Ham, chopped
  • 1 can sliced fresh mushrooms
  • 6 sheets heavy duty aluminum foil
  • 1 cup frozen peas
  • 1 can (10 oz.) condensed cream of mushroom soup

Directions

  1. Preheat oven to 400º. Mix stuffing mix with 1 1/2 cups water. Dividing evenly, place stuffing in center of 6 separate sheets of heavy duty aluminum foil.
  2. Layer chicken, ham, mushrooms and peas on top of stuffing, dividing evenly between each of the 6 foil packs.
  3. Mix soup with remaining 1/4 cup water and pour equal amounts over each pack.
  4. Bring up foil sides. Double fold top and ends to seal pack, leaving room for heat circulation inside.
  5. Complete all 6 foil packs and place on a 15x10x1 inch baking pan. Bake 30-35 minutes or until chicken is cooked through.
  6. Remove from oven and let stand 5 minutes before opening.
  7. Place packs directly on dinner plates. PACKS ARE HOT. Cut slits into foil using a knife or scissors to release steam before opening.

Notes

Foil packs can be prepared in the morning and refrigerated so you can just pop them in the oven when you get home.
