Sausage & Vegetable Strata

Ingredients

  • 1 lb. mild sausage
  • 6 slices bread, cut into 1/2'' cubes
  • 1 cup cooked broccoli florets
  • 1 cup cauliflower florets
  • 1/2 cup cooked baby carrots
  • 8 eggs
  • 1 cup table cream, mixed with 1/2 cup water
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 oz. ( 1 1/2 cups) shredded Cheddar cheese

Directions

  1. Remove sausage from casing and brown in a large nonstick skillet. Transfer to paper towels to drain. Spray a 13X9 baking dish with nonstick cooking spray.
  2. Combine sausage, bread cubes and vegetables. Pat into an even layer in a prepared dish.
  3. Mix eggs, cream mixture, mustard, salt and pepper. Pour over vegetable and bread mixture. Sprinkle with cheese.
  4. Cover with plastic wrap and refrigerate at least 4 hours or overnight.
  5. Heat oven to 375º. Bake 40-50 minutes or until knife inserted near center comes out clean.
