Tomato and Mozzarella Platter

Ingredients

  • 1/4 cup Olive oil
  • 3 tablespoons red wine vinegar
  • 1/3 cup packed fresh basil leaves
  • 1/2 teaspoon salt
  • 3 ripe tomatoes
  • 1/2 lb. mozzarella slices

Directions

  1. Puree Olive oil, red wine vinegar, fresh basil leaves, salt and pepper in a blender or food processor.
  2. Slice 3 tomatoes evenly.
  3. Alternate Mozzarella slices and tomatoes onto 4 plates.
  4. Drizzle with dressing.
  5. Garnish with mint leaves (optional)
