Mushroom Saute'

Ingredients

  • 3 tablespoons olive oil
  • 2 lbs. very small white mushrooms, cleaned and patted dry
  • 1/2 cup chopped parsley leaves
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano leaves
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh black pepper

Directions

  1. In a large nonstick skillet, heat oil over medium heat. Add mushrooms; cover and cook until mushrooms have softened and given up their liquid, about 10-12 minutes. Uncover and continue to cook until liquid evaporates. Remove from heat.
  2. Stir parsley, lemon juice, oregano, salt and pepper into mushrooms. Spoon into a serving dish. Let cool slightly to serve at room temperature.
