Yellow Squash Casserole

Ingredients

  • 2 sticks of butter
  • 2 lbs. acorn squash
  • 1 large carrot, grated
  • 1 small onion, chopped
  • 1 can cream of chicken soup
  • 8 oz. sour cream
  • 1 pkg. Pepperidge Farm Herb Dressing (not cubed)

Directions

  1. Preheat oven to 350º
  2. Peel squash.
  3. Boil squash onion and carrot until tender.
  4. In a medium sized bowl, melt butter and add dressing. Add soup and sour cream to carrot, onion and squash.
  5. Put a layer of dressing on bottom of a greased casserole dish. Add squash mixture and top with remaining crumbs.
  6. Bake at 350º about 20 minutes or until thoroughly heated.
