Roasted Garlic Paste

How to roast garlic cloves - 1 medium head yields about 1 tablespoon of garlic paste

Ingredients

  • Whole Garlic Cloves

Directions

  1. Peel away the dry outer layer of skin from garlic heads. Leave skins of cloves on.
  2. Cut off the pointed top portion with a sharp knife, leaving the bulb intact but exposing the individual cloves.
  3. Place the heads, cut side up, in a small baking dish. Drizzle with olive oil and bake uncovered at 400º for 25-35 minutes or until cloves feel soft when pressed.
  4. Let the heads cool before handling.

Notes

Mix some garlic paste into soups, combine with butter and use to baste chicken, fish or into cooked vegetables. Combine with sour cream to serve with baked potatoes or anything else where you would use garlic.
