Baked Clams

Always a staple in my Italian-American household

Ingredients

  • 1 can minced clams - save liquid
  • 1/3 cup breadcrumbs
  • 1 tablespoon oregano
  • 1 tablespoon parsley
  • 1 clove garlic, minced
  • 3 tablespoons olive oil
  • 1/2 - 3/4 cup chicken stock
  • 3 tablespoons Parmesan cheese
  • 1/4 teaspoon salt

Directions

  1. Pour clams, including liquid, into a medium sized skillet and warm. Mix all other ingredients into skillet. Mixture should be wet. Heat through.
  2. Fill shells and place them in a metal baking dish with 1/2 cup water on the bottom. Sprinkle with Paprika.
  3. Broil about 5 minutes. Mixture may bubble on the edges

Notes

If mixture is too dry, add more chicken stock. If mixture is too wet, add breadcrumbs, 1 tablespoon at a time. Use best judgement for texture.
