Holiday Turkey Gravy

Prep Time: 10 minutes || Cook Time: 10 minutes || Total: 20 Minutes
Servings: 8 || Yields:

Ingredients

  • 1/3 cup pan dripping from a roasted turkey
  • 3/4 cup dry white wine
  • 2 (14oz.) cans low sodium chicken broth
  • 6 tablespoons quick mixing flour
  • 1 tablespoon chopped fresh Thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Scrape the pan drippings into a fat separator or glass measuring up. Let stand for 5 minutes then pour or skim off the fat and discard.
  2. Combine the drippings and wine in a large saucepan; bring to a boil over medium-high heat. Cook until reduced by half, 4-5 minutes.
  3. Whisk 1 cup of the broth and flour in a small bowl until blended. Stir the remaining broth into the wine mixture and bring to a simmer. Whisk in the flour mixture, thyme, salt and pepper to the saucepan, beating with a whisk. Cook, whisking constantly, until the gravy thickens slightly, about 5 minutes.
  4. Strain through a sieve into a serving bowl or gravy boat.
