Chicken Pasta Primavera

Ingredients

  • 1 (16oz.) package fresh vegetable medley (broccoli, cauliflower and carrot)
  • 1 14 oz. can fat free, low sodium chicken broth
  • 1/2 cup water
  • 1 (4.8oz.) package angel hair pasta with herbs
  • 1 6 oz. package refrigerated grilled chicken breast or precooked chicken, cut into strips
  • 1/4 cup shredded fresh Parmesan cheese
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Cook vegetables in microwave according to package directions.
  2. While vegetables cook, combine chicken broth and water in a medium saucepan; bring to a boil. Reduce heat, stir in pasta and seasoning packet. Simmer, uncovered 5-10 minutes or until pasta is tender, stirring occasionally.
  3. Remove from heat and stir in cooked vegetables and chicken. Cover and let stand 3 minutes. Remove to a serving bowl and sprinkle with Parmesan cheese and pepper.
