Turkey and Broccoli Casserole

Another use for Thanksgiving turkey leftovers

Ingredients

  • 2/3 cups water
  • 1/3 cup butter
  • 1 package (10 oz.) frozen broccoli spears, partially thawed
  • 2 cups herb-seasoned stuffing mix
  • 1 1/2 cups cubed turkey
  • 1 jar or can (10-12oz.) turkey gravy, or leftover gravy
  • 1 can (4oz.) sliced mushrooms, drained

Directions

  1. Preheat oven to 350º
  2. In a large saucepan over medium high heat, heat water and butter until butter melts.
  3. In a 10'' shallow casserole or baking dish, arrange broccoli with stems pointed toward center. Add stuffing mix to water-butter mixture and toss until evenly moist. Place stuffing over broccoli stems.
  4. Top with turkey and gravy, then mushrooms.
  5. Bake for 30-35 minutes or until bubbly.
