Hungarian Beef and Noodles Casserole

  • 1 lb. lean ground beef
  • 1/2 teaspoon salt
  • Pepper to taste
  • 1 can (16oz.) tomatoes, chopped
  • 1 can (8oz.) tomato sauce
  • 1 can (13oz.) beef broth
  • 1 cup chopped green pepper
  • 1 tablespoon paprika
  • 6 oz. egg noodles
  • 1/4 cup plain low-fat yogurt (optional)


  1. Preheat oven to 500º
  2. Mix beef with salt and pepper; shape in 20 small balls. Place on rack in a 13''X9'' baking pan. Bake for 10 minutes. Remove from rack, drain and discard fat from pan.
  3. Place meatballs back in pan. Stir in tomatoes, tomato sauce, beef broth, green pepper, paprika and noodles; mix well.
  4. Lower heat to 425º. Bake, uncovered 25 minutes or until noodles are tender and sauce is thickened. Serve immediately, topped with yogurt if desired.
