Hashed Browns

Ingredients

  • 1 1/2lbs. potatoes (about 4 medium) boiled, cooled and shredded
  • 2 tablespoons finely chopped onions
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons butter
  • 2 tablespoons cooking oil

Directions

  1. Mix potatoes with salt and pepper. Heat butter and oil in a 10''-12'' skillet.
  2. Spread mixture in skillet leaving 1/2'' around sides. Cook over low heat until bottom is brown, 15-20 minutes.
  3. Cut potato mixture into quarters, flip and cook 15-20 minutes longer or until browned.
  4. Add oil if necessary to prevent sticking
