Chipotle Lime Slow Cooker Chicken

A spicy blend of tender chicken breast and vegetables topped with melted cheese and bacon.

Ingredients

  • 2 chicken breasts
  • 1 cup chicken broth
  • 6 orange/red mini bell peppers
  • 4-6 baby portabella caps
  • 1/3 cup sliced jalapeños
  • 1/2 cup presoaked or canned black beans
  • 1 tbsp Wildtree chipotle lime rub (or taco seasoning)
  • 4 slices jalapeño bacon
  • 1/2 cup shredded monterey jack cheese

Directions

  1. Place chicken breast in slow cooker
  2. Pour in chicken broth
  3. Slice mini bell peppers in half (tops and seeds removed)
  4. Remove stems from baby portabellas and half or quarter to bite sized
  5. Place peppers, mushrooms, jalapeños and beans in broth around the chicken leaving chicken tops exposed.
  6. Sprinkle chipotle lime rub over all ingredients.
  7. Cook on low for 8 hours
  8. Near end, cook bacon and chop or crumble.
  9. Place chicken and vegetables on dish, top each breast with 1/4 cup cheese. Broil until bubbling and browning.
  10. Top with bacon crumbles.
