Snowy Vanilla Cake

a white vanilla cake perfect for the holidays

Ingredients

  • 2 1/4 C white sugar
  • 1 1/4 C salted butter, softened
  • 7 large egg whites, room temperature
  • 3 1/2 C cake flour such as softasilk or King Arthur
  • 4 tea. baking powder
  • 1/2 tea. salt
  • 1 C water
  • 2 tea. clear vanilla

Directions

  1. Preheat oven to 350 F
  2. Beat sugar and butter at medium speed until fluffy, about 3-5 minutes
  3. Gradually add the egg whites, 1/3 at a time, beating well after each addition
  4. Sift together the cake flour, baking powder and salt, gradually adding the butter mixture, alternating with the water, beginning and ending with the flour mixture
  5. Stir in the vanilla
  6. Pour the batter into 3 greased and floured 9'' cake pans
  7. Bake 19-21 minutes until a wooden toothpick comes out clean
  8. Cool the cakes in the pans on wire racks 10 minutes then cool completely, about 30 minutes
  9. Frost with cream cheese buttercream frosting between layers and on top and sides. Garnish with clear edible glitter or garnish of your choice (i.e. colored icing poinsettia) or coconut
