Fudgy Pecan Bourbon Balls

Ingredients

  • Small paper baking cups
  • 8 oz. 60% cacao dark chocolate cut into 1/2'' pieces
  • 1/2 cup heavy whipping cream
  • 1/4 cup (2oz.) bourbon
  • 3/4 cup pecan halves, finely chopped (Pistashios are good too)

Directions

  1. Place the chocolate pieces in a medium mixing bowl
  2. In a saucepan over medium heat, combine the heavy cream and bourbon to a near boil. Remove from the heat and pour over the chocolate pieces
  3. Let stand 1 minute then stir vigorously until mixture is blended.
  4. Let the mixture cool for 15 minutes
  5. Cover with plastic wrap and chill until firm, about 2 hours
  6. Place the chopped nuts on a shallow plate and set aside
  7. Line a baking sheet with parchment paper
  8. Working quickly, use a teaspoon or small scoop (2 teaspoon size) dipped in hot water (then dried)
  9. Shape into a ball.
  10. Place each ball onto the chopped nuts
  11. Once the plate is full, wash your hands and roll each ball into the nuts to cover completely
  12. Transfer the balls onto a parchment lined baking sheet. Repeat with remaining mixture and place each into paper baking cup
  13. Chill the balls until firm, about 1 hour
  14. Store in an air tight container up to 1 week
