Herb Roasted Turkey Breast

Ingredients

  • 2 Tablespoons extra virgin olive oil
  • 1 Tablespoon chopped fresh Sage
  • 1 Tablespoon chopped fresh Rosemary
  • 1 Teaspoon minced garlic
  • 1/2 teaspoon celery seed
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 boneless, skin on turkey breast

Directions

  1. In a small bowl, combine sage, rosemary, garlic, celery salt, salt and pepper to make a paste.
  2. Rub olive oil all over turkey breast, including under the skin.
  3. Place one breast on top of the other, skin sides out, and use cooking twine to tie into a compact roast.
  4. Wrap in plastic and refrigerate 6-24 hours.
  5. Preheat oven to 350º and place turkey in a roasting pan fitted with a roasting rack.
  6. Roast until juices run clear and the internal temperature registers 165º, approximately 90 minutes to 1 hour, 45 minutes.
  7. Let rest, loosely tented with foil about 30 minutes before carving

Notes

If you're not crazy about turkey you could also use chicken breast. Adjust roasting time
