Goldee's BBQ inspired BBQ Rib Glaze

Ingredients

  • 2 Cups Ketchup
  • 1 Cup Brown Sugar
  • 1 Cup White Sugar
  • 1 Cup Apple Cider Vinegar
  • 1 Cup White Vinegar
  • 1 Tbsp Ground Onion
  • 1 Tbsp Ground Garlic
  • 1 Tbsp Cumin
  • 1 Tbsp Black Pepper
  • 1/4 Cup Molasses
  • 1/4 Cup Mushroom Sauce

Directions

  1. Mix together all ingredients and add water as needed to desire thickness.
  2. Apply after ribs are cooked following your method.
  3. Goldee's method is to cook 275 for 5 hours unwrapped. Glaze and wrap in aluminum foil with stick of butter on bottom of rack allowing to rest for 2 hours meat side down.

Notes

Apply rub to ribs and allow to sit for 15 minutes.

4-1-1 method, with one change. 225 for 4 hours and 275 for 2 hours, but wrap in butcher paper the last hour. I add the glaze when wrapping and the result is top tier.

3-2-1 method: 225 for 3 hours unwrapped. Add 1-2 cups of butter sliced under the ribs and place meat side up on top of butter. Place back on grill for 90 minutes and then start checking for tenderness. Ribs should droop when lifted. Check every 15 minutes until they feel like they will fall apart. Now cook 1 hour meat side up and baste with glaze for 1 hour.
