Birria Tacos

Amazing birria tacos with consommé.

Ingredients

  • ---------------Birria Marinade---------------
  • 2 lbs Tomato
  • 1 large Sweet Onion
  • 20 Garlic Cloves (Pestle Mortar)
  • 1 tbsp Ginger Paste
  • 5 Dry Chili Ancho
  • 5 Dry Chili Guajillo
  • 5 Dry Chili Arbol
  • 1 tbsp Spice Berry
  • 1 tbsp Black Pepper
  • 1 tbsp Cumin
  • 1 tbsp Oregano
  • ½ Stick Cinnamon
  • 3 tbsp Salt
  • ¼ Cup Apple Cider Vinegar
  • 2 liter Water
  • ---------------Verde Salsa---------------
  • 10 Tomatillos
  • 2 Garlic Cloves
  • 1 Serrano Pepper
  • 3 tbsp Cilantro
  • 2 Avocado
  • Salt & Pepper to Taste
  • ---------------Roja Salsa---------------
  • 10 tomatillos
  • 3 Garlic Cloves
  • ½ White Onion
  • 20 Arbol Chili Pepper
  • 3 tbsp Cilantro
  • Salt & Pepper to Taste

Directions

  1. ---------------Birria Marinade---------------
  2. Using a pestle mortar crush the 20 garlic cloves into a soft mash and add Ginger Paste.
  3. Add oil to pan and add color to onions.
  4. Add tomatoes for about 3 minutes.
  5. While tomatoes are cooking heat peppers in hot skillet and oil for 1 minute and add to tomato and onions. Also add spices and the garlic/ginger mix.
  6. Cook on medium high heat for 5 minutes and allow to cool slightly before adding to blender.
  7. ---------------Short Ribs---------------
  8. Cut the short ribs into strips (2 racks?) and add to the pot.
  9. Cover with our marinade and add water until the ribs are covered.
  10. Bring to boil and cover and let cook for 3 hours until completely tender.
  11. After 3 hours remove carefully as they will be tender and remove the meat from the bones.
  12. Chop the meat finely and place aside until ready to use.
  13. ---------------Consommé---------------
  14. Take the liquid from our short rib pot and strain.
  15. Cover and put in refrigerator overnight.
  16. Next day remove the fat layer from the top and set aside.
  17. ---------------Make Tacos---------------
  18. Reheat the meat by adding some of our Consommé and meat in a skillet.
  19. On the grill place our tortillas and add meat and cheese. Fold once cheese starts to melt.
  20. Take our fat from the consommé and add to skillet to allow the tortilla to absorb the flavors and serve with a side of consommé.
  21. ---------------Verde Salsa---------------
  22. Add Tomatillos to pan and add some color and remove. About 5 minutes
  23. Repeat for Serrano Pepper and Garlic.
  24. Add Tomatillos, Serrano Pepper, Garlic, Salt, Pepper, Cilantro and Avocado to the blender.
  25. ---------------Roja Salsa (Spicy)---------------
  26. Add Tomatillos to pan and add some color and remove. About 5 minutes
  27. Repeat for Arbol Chili Pepper, White Onion and Garlic.
  28. Add everything to the blender on high.

Notes

Best when meat and consommé are made night before.
