Shrimp Toast

Servings: 12 || Yields: 2 triangles per person
Ingredients
- 1 12oz. package frozen cooked shrimp, thawed
- 1 egg white
- 2 tablespoons dry white wine or cooking sherry
- 1 teaspoon cornstarch
- 1 teaspoon salt
- 1 teaspoon minced green onion
- 1/8 teaspoon ground ginger
- 6 slices of thin white bread
- parsley leaves and salad oil
Directions
- In a covered blender at medium speed, mix shrimp until finely chopped.
- In a medium bowl, mix shrimp with next 6 ingredients and set aside.
- Cut crusts from bread slices.
- Cut each slice into 4 triangles.
- Spread 1 heaping teaspoonful of mixture evenly on to a triange.
- Gently press a parsley leaf on each triangle.
- In a 5 qt. dutch oven, heat 1'' of salad oil to 325 deg. F
- Carefully place 5 or 6 triangles shrimp side down into hot oil.
- Cook until lightly browned, about 3 minutes.
- Turn bread and cook 1 minute longer or until bread is golden.
- Remove to paper towels to drain.
