Shrimp Toast

Prep Time: 20 minutes || Cook Time: 15 minutes || Total: 35 Minutes
Servings: 12 || Yields: 2 triangles per person

Ingredients

  • 1 12oz. package frozen cooked shrimp, thawed
  • 1 egg white
  • 2 tablespoons dry white wine or cooking sherry
  • 1 teaspoon cornstarch
  • 1 teaspoon salt
  • 1 teaspoon minced green onion
  • 1/8 teaspoon ground ginger
  • 6 slices of thin white bread
  • parsley leaves and salad oil

Directions

  1. In a covered blender at medium speed, mix shrimp until finely chopped.
  2. In a medium bowl, mix shrimp with next 6 ingredients and set aside.
  3. Cut crusts from bread slices.
  4. Cut each slice into 4 triangles.
  5. Spread 1 heaping teaspoonful of mixture evenly on to a triange.
  6. Gently press a parsley leaf on each triangle.
  7. In a 5 qt. dutch oven, heat 1'' of salad oil to 325 deg. F
  8. Carefully place 5 or 6 triangles shrimp side down into hot oil.
  9. Cook until lightly browned, about 3 minutes.
  10. Turn bread and cook 1 minute longer or until bread is golden.
  11. Remove to paper towels to drain.
