Fresh Mushroom Salad

Ingredients

  • 1 head romaine, washed and chilled
  • 1 head any other lettuce, washed and chilled
  • 1/2 lb. mushrooms, trimmed and sliced
  • Garden Dressing:
  • 1/2 cup salad oil
  • 1/4 cup wine vinegar
  • 1/4 cup sliced green onion
  • 1/4 cup snipped parsley
  • 1 Tablespoon finely chopped green pepper
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 1/8 teaspoon crushed red pepper flakes

Directions

  1. Line salad bowl with romaine leaves. Into a bowl, tear second head of lettuce into bite sized pieces (about 8 cups)
  2. Add mushrooms
  3. Pour Garden Dressing over greens and toss.
  4. Spoon into salad bowl with the romaine leaves
