Asparagus and Chicken Salad

Ingredients

  • 2 lbs. asparagus
  • 1 Tablespoon sesame oil
  • 1/2 teaspoon seasoned salt
  • Salt and pepper to taste
  • 1/4 cup double strength chicken broth
  • 2 Tablespoons soy sauce
  • 2 cups cooked chicken, cut into thin strips
  • 2 Tablespoons cider vinegar

Directions

  1. Wash and peel the asparagus
  2. Cut asparagus on the diagonal into 1'' pieces
  3. Heat the sesame oil in a heavy saute' pan
  4. When the oil is very hot, add the asparagus and stir fry for 2 minutes, stirring constantly
  5. Add the seasoned salt, salt and pepper and stir another 30 seconds
  6. Pour in the chicken broth and soy sauce. Cover and cook 1 minute longer. Remove from heat.
  7. Add the chicken and mix well
  8. Transfer to a serving platter or cover and refrigerate until serving time
  9. Just before serving, add the cider vinegar and toss until well blended

Notes

An Asian inspired spin on asparagus. You can also sprinkle with toasted sesame seeds.
