Asparagus and Chicken Salad

Ingredients
- 2 lbs. asparagus
- 1 Tablespoon sesame oil
- 1/2 teaspoon seasoned salt
- Salt and pepper to taste
- 1/4 cup double strength chicken broth
- 2 Tablespoons soy sauce
- 2 cups cooked chicken, cut into thin strips
- 2 Tablespoons cider vinegar
Directions
- Wash and peel the asparagus
- Cut asparagus on the diagonal into 1'' pieces
- Heat the sesame oil in a heavy saute' pan
- When the oil is very hot, add the asparagus and stir fry for 2 minutes, stirring constantly
- Add the seasoned salt, salt and pepper and stir another 30 seconds
- Pour in the chicken broth and soy sauce. Cover and cook 1 minute longer. Remove from heat.
- Add the chicken and mix well
- Transfer to a serving platter or cover and refrigerate until serving time
- Just before serving, add the cider vinegar and toss until well blended
Notes
An Asian inspired spin on asparagus. You can also sprinkle with toasted sesame seeds.
