Zippy Potato Salad

Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 1/4 cup oil, preferably olive
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon Dijon style mustard
  • 3 tablespoons coarsely chopped stuffed olives
  • 2 tablespoons minced onion
  • 1 tablespoon drained sweet pickle relish
  • 4 large cooked potatoes, cooled, cubed and peeled if desired (about 4 cups)
  • 1 cup diced celery
  • Chopped parsley

Directions

  1. To make the dressing, put mayonnaise in a medium bowl and alternately whisk in small amounts of the cider vinegar and oil until blended.
  2. Stir in seasoned salt, mustard, olives, onion and relish.
  3. Fold dressing into potatoes and celery.
  4. Turn into serving bowl, cover and chill.
  5. Before serving, sprinkle with parsley.
