Zippy Potato Salad

Ingredients
- 1/2 cup mayonnaise
- 2 tablespoons cider vinegar
- 1/4 cup oil, preferably olive
- 1 teaspoon seasoned salt
- 1/2 teaspoon Dijon style mustard
- 3 tablespoons coarsely chopped stuffed olives
- 2 tablespoons minced onion
- 1 tablespoon drained sweet pickle relish
- 4 large cooked potatoes, cooled, cubed and peeled if desired (about 4 cups)
- 1 cup diced celery
- Chopped parsley
Directions
- To make the dressing, put mayonnaise in a medium bowl and alternately whisk in small amounts of the cider vinegar and oil until blended.
- Stir in seasoned salt, mustard, olives, onion and relish.
- Fold dressing into potatoes and celery.
- Turn into serving bowl, cover and chill.
- Before serving, sprinkle with parsley.
