Ramen Primavera

Ingredients

  • 1 cup fresh broccoli
  • 1 cup snow peas
  • 1 cup red pepper, cut into 1/2'' squares
  • 1/2 cup thin sliced carrots
  • 1/2 cup slivered red onion
  • 3 tablespoons olive oil
  • 1 2/3 cups water
  • 2 packages chicken flavored ramen noodles

Directions

  1. Thoroughly break up noodles from the ramen packets and set aside.
  2. Heat 3 tablespoons of olive oil in a skillet.
  3. Add the vegetables and stir fry for one minute
  4. Stir in the noodles, the seasonings from both flavor packets and 1 2/3 cups water.
  5. Cover and cook 3-5 minutes or until liquid is absorbed, stirring a few times during cooking.
  6. Sprinkle with 1/4 cup toasted slivered almonds before serving
