Ramen Primavera

Ingredients
- 1 cup fresh broccoli
- 1 cup snow peas
- 1 cup red pepper, cut into 1/2'' squares
- 1/2 cup thin sliced carrots
- 1/2 cup slivered red onion
- 3 tablespoons olive oil
- 1 2/3 cups water
- 2 packages chicken flavored ramen noodles
Directions
- Thoroughly break up noodles from the ramen packets and set aside.
- Heat 3 tablespoons of olive oil in a skillet.
- Add the vegetables and stir fry for one minute
- Stir in the noodles, the seasonings from both flavor packets and 1 2/3 cups water.
- Cover and cook 3-5 minutes or until liquid is absorbed, stirring a few times during cooking.
- Sprinkle with 1/4 cup toasted slivered almonds before serving
