Garden Delight Potato Salad

Ingredients

  • 1 can (15oz) VEG-ALL mixed vegetables
  • 2 cups diced cooked potatoes
  • 1/4 cup sliced green peppers
  • 1/4 cup diced sweet pickle
  • 1 bunch of green onions, cut into 3/4'' pieces, including tops
  • 6 salami slices
  • 3 hard cooked eggs, sliced
  • 3/4 cup mayonnaise
  • 2 teaspoons horseradish
  • 1 dash hot pepper sauce
  • 1 1/4 teaspoon salt
  • lettuce leaves

Directions

  1. Drain canned vegetables thoroughly and combine with diced potatoes, green pepper, sweet pickle, green onions, 4 slices of salami, cut into strips and 2 of the hard cooked eggs. Chill thoroughly.
  2. Mix together mayonnaise, horseradish, hot pepper sauce and salt. Add to chilled vegetable mixture and toss lightly.
  3. Line a chilled salad bowl with crisp greens, fill with salad.
  4. Garnish with remaining salami strips and egg slices.
