Pasta Salad for a Crowd

This recipe makes a lot of pasta salad.

Ingredients

  • 7 lbs. spiral noodles, plain or colored variety
  • 4 cups extra virgin olive oil
  • 2 cups grated romano or parmesan cheese
  • 3 oz. good seasons dry Italian salad dressing
  • 11 tablespoons dried parsley flakes
  • 3 tablespoons dried basil
  • 2 tablespoons dried oregano
  • 5 cups red wine vinegar
  • 3 cups sliced black olives
  • 6 cups broccoli, blanched and finely chopped
  • 2 tablespoons garlic powder

Directions

  1. Put pasta into a huge pot of boiling water with 3 tablespoons of olive oil. Cook pasta about 8 minutes or until done.
  2. Drain and rinse under cold water several minutes.
  3. Toss with remaining ingredients.

Notes

You can use a canning pot to boil all the pasta at one time.
